The chef of Semproniana, Ada Parellada, makes a good, healthy, and affordable sardine dish. A very Mediterranean bite that is prepared quickly.
- Ingredients12 sardines
- A tomato
- A small bunch of parsley
- A lemon
- A handful of capers (a dozen)
- Olive oil
- Salt
- The step-by-step recipeWe peel and dice the tomato, discarding the seeds. We chop the parsley.
- We cut the capers in half. We mix all the ingredients and add the grated lemon zest.
- Scale the sardines and open them in half. Remove the central bone and check for any remaining bones in the belly and loin. Wash them and lay them out on a baking tray. Sprinkle them with lemon juice, season with salt, and stuff them with the mixture of tomato, parsley, capers, and lemon.
- We drizzle them with a dash of oil and cook them in the air fryer for 3-5 minutes at 180°C.
