How to clean them

Do not put them in water or even get them wet. Wipe them with a damp cloth or clean them with a brush one by one. If, even then, the mushrooms have a lot of sand, pass them under the tap quickly so they do not soften.

How to cook them

The best way to cook them is with high-heat impact. That is why they turn out so well grilled, pan-seared, or broiled. If we stir-fry them, it should be over high heat and in small portions to sear them well; otherwise, they will release all their water and end up tasting boiled.
