Joan Fernández and Martí Just do everything together. They make today's unique wine, the red with Sumoll, Mandó, and a bit of Tempranillo fermented in a medieval stone winepress. Since 2016, going to draw the wine from the stone winepress—or going to see how they make it—is a unique spectacle. The wine press of the La Diferenta project, in the municipality of Navàs, in Bages, is one of the oldest preserved. We know this because it has a follador, which is where the grapes are trodden. with the peach: that wood that was in the vats. If we think about before, we see that it was easier to transport liquid than grapes. That's why it was important to make wine at the foot of the vineyard. quickly to ferment."

In the glass we will find a surprising wine. Very fresh, with very good acidity, because Sumoll is magical: it gives freshness, low alcohol content and is very easy to drink. The ancient sediment of a great river 40 million years old. "It was a river that passed through here, through Castelladral, which, in case you don't know, is the center of the world. This sediment petrified and became sandstone, but it is soft stone. In medieval times it was used for everything. To chip tombs, silos, vats..." This doesn't happen anywhere else.

The wine is a tribute to the people who have preserved this plant heritage, the native varieties. Those people who went to work at the factory but took care of the vineyards out of love, because they had been planted by their grandfather and his men. It is one hundred years old. It is called the temple vineyard because we always give it the name of the person who passed it on to us. It's on the slopes of Vilafresca."

La Diferenteta is a tribute to that talk of then –ofbefore–, when some things were feminized and were no longer just different, but differentIt's also a desire to recover old vineyards. The Sumoll that's in the canopy today would evolve differently in another part of the world, I mean, different. It's a small-grain, oval-grain Sumoll. "Everything the older people have taught us. The Mandón can't be from an old vineyard because we're recovering it. It's seven years old."

The Mandón and the Sumoll, together, make a very, very emotional glass, because they pair well. The Mandón is very "around the mouth" and the Sumoll, "core." On the palate, the Mandón is like Pinot, perhaps giving you dried flowers. The Sumoll, on the other hand, would be like a Nebbiolo, which gives you fruit. And the Tempranillo is what gives it tension. It has a low alcohol content, is easy to drink, and makes you friends with the glass; you have a relationship because you want more.
