Wind fritters: how to make them at home with the best recipe

BarcelonaXavier Barriga, baker and creator of Turris, He is a defender of traditional pastry recipes, such as Lent fritters, which are one of the most anticipated fried desserts of the Catalan sweet calendar. To make the wind fritters at home, the baker proposes a recipe with little sugar, easy to make and very tasty.

Ingredients for 60 Lent fritters

  • 250 ml of milk
  • 150 g butter
  • 200 g of soft flour
  • 15 g of sugar
  • 6 eggs
  • Virgin olive oil (for frying the fritters)
  • Sugar for coating (according to taste)

Making wind fritters

  1. Mix the milk and butter in a saucepan that can be placed on the stove and bring the mixture to a boil. When it starts to boil, add the flour and sugar, which you will have previously mixed in a single bowl. Stir well in the saucepan on the stove until you get a ball-shaped dough.
  2. Then, off the heat, pour into a bowl and continue stirring. Now add an egg and mix everything together. Continue doing this, egg by egg. You have to add the eggs little by little so that the mixture is compact. The texture should be spongy.
  3. Put the mixture into a pastry bag. Make balls of fritters (about 10 g) and then fry them in oil at 180 ºC until golden.
  4. Let the fritters cool on absorbent paper to absorb any excess oil. Once cool, coat them in a bowl with white sugar.
  5. They will be ready to eat now.
