Cava is, above all, a territory that beats and grows to the rhythm of the vine cycle, which has proven to be the great anchor for the population and economy of our towns. Beyond a regulatory requirement, it is a "universal" guarantee, recognized worldwide, a symbol of prestige thanks to which consumers around the world identify Cava with history, heritage, territory, quality, tradition, and rigor.
Behind Cava, one of the most renowned and prestigious sparkling wines in the world, lies the know-how of nearly 5,000 winegrowers and 300 wineries of different sizes and sizes, which embrace a wide variety of production profiles. Large, medium-sized, and small, all are represented equally on the Regulatory Council, united by a common goal: to guarantee the excellence and authenticity of a unique wine, keeping alive a tradition and know-how that has been passed down, generation after generation, for 150 harvests. Thus, the diversity and richness of the local grape variety has been preserved in its vineyards, with 80% of its vineyards representing the Macabeo, Xarel·lo, Parellada, Triunvirato varieties, and the personality of Cava.
Although for historical and human reasons we can find some CAVA DO municipalities in other areas, as is the case in large sparkling wine appellations such as Champagne, San Sadurní de Anoia and its surroundings are the heart of the Denomination of Origin; nearly 90% of Cava production comes from Catalonia and Cava represents around two-thirds of wine grape production in Catalonia.
Tradition and Future: traditional method and new pyramid of excellence
The DO CAVA, one of the most recognized and exported sparkling wines in the world, is the only designation of origin in Spain dedicated exclusively to sparkling wine, projecting its identity through a very exclusive production method shared by very few regions in the world: the "traditional method." Thanks to its secondary fermentation in the bottle, Cava offers a truly unique harmony, balance, and integration of bubbles.
In addition to the already high quality guarantee provided by the traditional method, a classification with even greater demands has recently been added: a pyramid of excellence in which long aging and origin are the main features.
Cavas de Guarda Superior are aged for at least 18 months, as is the case with Cava de Guarda Superior Reserva. This ageing period increases to over 30 months for Cava de Guarda Superior Gran Reserva or Cava de Guarda Superior de Paraje Calificado, which are aged for over 36 months. Since 2025, all Cavas de Guarda Superior have been 100% organic, reflecting the DO's clear commitment to sustainability and respect for the environment.
Furthermore, the DO CAVA has created the Integral Producer seal, which identifies wineries that carry out the entire production process, from pressing to vinification, on their own property. Currently, 16 wineries can boast of being integral Cava producers.

Current consumer trends call for a fresh, moderate-alcohol wine profile that can pair with the world's most varied cuisines; hence, sparkling wine consumption has experienced an unprecedented rise in its history.
